It’s officially pancake day and since tomorrow is Valentine’s day, why not make some Vday pancakes for a loved one or for yourself?
This is my go to vegan pancake recipe and I promise you they’re the fluffiest, most delicious pancakes you’ll ever try! You can even swap out the cherries for blueberries or chocolate chips, or leave them plain. Either way, they won’t disappoint!
⌁2 cups flour
⌁1.5 tsp baking powder
⌁1/8th tsp salt
⌁1 tbsp olive oil
⌁1.5 tbsp egg replacer
⌁1/2 tsp cinnamon
⌁1/2 cup muscovado or brown sugar
⌁1 3/4 cups cashew milk
⌁1/2 tsp vanilla extract
⌁coconut oil for frying
⌁soya yoghurt (optional)
⌁cherry jam (optional)
Add the dry ingredients (flour, baking powder, salt, egg replacer, cinnamon and sugar) to a bowl and mix. Remember to sift the flour when doing this.
Add all the wet ingredients (olive oil, cashew milk, vanilla extract) and combine everything, but don’t over mix.
In a pan greased with a little bit of coconut oil, add dollops of pancake batter and top each one with 3 frozen cherries. Cover the pan and cook until you see little bubbles at the top and flip to brown the other side.
Top with cooked cherries or cherry jam and soya yoghurt.
This recipe makes 10-12 fluffy pancakes in total.
