These crunchy quinoa, chocolate and peanut butter “doughnuts” are sure to satisfy your after dinner chocolate craving, while still being loaded with antioxidants, good fats and plant based protein.
What’s not to love?
Ingredients:
⌁1tbsp of natural peanut butter
⌁100g dark vegan chocolate
⌁1/2tsp vanilla extract
⌁1 pinch of salt
⌁60g puffed quinoa / quinoa pops
Method:
In a double boiler or in a microwave, melt the chocolate with the peanut butter. Once melted, add the vanilla and salt and stir.
Next, add in the puffed quinoa and mix until it’s well combined.
Press the mixture into the doughnut mold (or into any other shape you prefer) and place in the freezer for 10-15mins.
To remove them from the mold, place the bottom of the pan in warm water for a few seconds. They should pop right out after this.
Store them in the fridge or at room temperature until you are ready to enjoy your healthy-ish treat!
