Avocado Pasta With Smokey Spiced Mushrooms

This pasta dish is the perfect alternative to your mid-week pasta dinner. It is quick to make, healthy and SO flavourful.

This avocado sauce can also be used as a dressing or sauce for salads, baked potatoes or cruditΓ©s.

Avocado Pasta With Smokey Spiced Mushrooms

    For the pasta:
  • 200g chickpea or red lentil pasta
  • For the mushrooms:

  • 100g mushrooms
  • 1/2 tbsp oil
  • 2 drops liquid smoke
  • 1 tsp garlic powder
  • 1/2 tsp paprika powder
  • 1tbsp soy sauce
  • For the sauce:

  • 100ml plant based milk
  • 2 avocados
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • Juice of 3/4 a lemon
  • 1 tbsp chopped fresh parsley
  • 1/2 tsp salt
  • 1 tbsp nutritional yeast flakes
  • 2 tbsp water


  1. Boil the pasta according to package instructions and drain.
  2. Chop the mushrooms and fry them in a pan on high heat with the oil, liquid smoke, soy sauce, paprika and garlic powder until they are browned and fragrant.
  3. Add the flesh of two avocados to a blender along with the garlic powder, black pepper, lemon juice, fresh parsley, salt, nutritional yeast flakes and water and blend until you have a creamy sauce.
  4. Assemble the dish by placing the pasta in a bowl, then top it with the sauce and mushrooms, followed by some chilli flakes (optional).
